Crispy Chicken Strips with Basil Sauce

For 4 servings

- 4 chicken breasts, cut into strips
- 100 g (3 1/2 oz.) bread crumbs (Tipiak or other breading)
- 150 g (5 oz.) arugula leaves
- 1 tbsp. Parmesan
- 2 eggs
- 2 tbsp. oil
- Salt and pepper

Basil sauce
- 1 hard-boiled egg
- 30 g (1 oz.) fresh basil
- 1 tbsp. grainy mustard
- 1 tbsp. fresh grated Parmesan
- 8 tbsp. olive oil
- Salt and pepper

Basil sauce

  1. In a blender, combine the hard-boiled egg, basil, mustard and 1 tbsp. Parmesan.
  2. With the blender running, slowly pour in the 8 tbsp. olive oil to form a creamy sauce.
  3. Season with salt and pepper and set aside.

Preparing the chicken strips

  1. Beat the remaining eggs with some salt and pepper.
  2. In another bowl, combine the bread crumbs and the remaining Parmesan.
  3. Dip the chicken strips into the egg, then the bread crumb-Parmesan mixture.
  4. Heat the remaining olive oil in a skillet and cook the chicken strips on both sides.
  5. Serve with the basil sauce and some arugula leaves.
