Croûte comtoise - Creamed Mushrooms and Cheese on Toast

Ingredients for 2 servings
- Crusty bread
- 50 g (2 oz.) butter + more for the bread
- 450 g (1 lb.) Morels
- 100 g (6 tbsp.) cream
- 50 g (2 oz.) Comté or gruyere cheese
  1. Split the bread lengthwise and hollow out; brush with butter and toast in the oven for a few moments;
  2. melt the butter in a skillet; add the morels and brown for a few minutes; remove and set aside;
  3. add the cream to the skillet and simmer until thickened;
  4. combine the cream and morels; spread on the bread;
  5. sprinkle with grated cheese and place under the broiler until browned.
