Chef's Note
In India, "chatni" or chutney is prepared daily to accompany curries. It varies according to which herbs, vegetables and fruits are in season.
This kind of chutney contains only fresh ingredients and is never preserved; it will keep only 2 to 3 days in the refrigerator.

Ingredients
- 225 g (8 oz.) pitted Dates
- A small piece of fresh coconut
- 4 tbsp. fresh lemon juice
- 4 tbsp. water
- 1 tbsp. fresh cilantro
- 1/2 tsp. fennel seed
- 1 tsp. salt
- 2 tbsp. fresh ginger
- Black pepper to taste
Method
- Finely chop all the ingredients;
- Crush the fennel seeds by rubbing them vigorously between the palms of your hands;
- In a bowl, combine all the ingredients; season;
- Serve immediately or refrigerate in a tightly closed jar for up to 3 days.
