Steamed pork and shrimp dim sum Recipe

Ingredients
For 24 dumplings
- 24 wonton wrappers
Filling
- 100 g / 1/4 pound shrimp, cleaned and deveined
- 100 g / 1/4 pound ground pork
- 60 ml / 1/4 cup chopped fresh baby spinach
- 2 scallions finely chopped, white part only
- 1 /4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 water chestnuts, chopped
- 1 teaspoon chopped ginger
- 1 clove garlic, crushed
- 2 teaspoons sesame oil
- 2 teaspoons hoisin sauce
- 2 teaspoons mirin (Japanese rice wine)
Dipping sauce
- 60 ml / 1/4 cup soy sauce
- 3 tablespoons mirin
Method
- Place the shrimp in the bowl of a food processor and pulse on and off until the shrimp forms a paste.
- Combine the shrimp paste with the remaining filling ingredients in a mixing bowl and stir well to combine.
- Place 1/2 tablespoon of the mixture into the center of each of the wonton wrappers. Bring up the sides, pleating the dough to form a pouch (don't worry if the center is slightly open.)
- Pour 250 ml / 1 cup of water into the cooking bowl and line the steamer basket with lettuce leaves.
- Arrange the dumplings on the lettuce leaves and set the steamer basket in place. Close the cover, select STEAMING and set the timer for 15 minutes.
- While the dumplings are steaming combine the dipping sauce ingredients. Serve the dumplings with the dipping sauce on the side.
