Chef's Note
Choose wide serving dishes (coupes) for this recipe to highlight the various colors and components of the dessert.
For 4 servings

- 250 ml (1 cup) pistachio ice cream
- 16 ladyfinger biscuits
- 3 tbsp. orgeat syrup
- 500 ml (2 cups) water
- 400 g (14 oz.) red currants, stems removed

- 4 ice cream glass bowl
  1. Combine the water and orgeat syrup.
  2. Place a large scoop of ice cream into each coupe and, using the back of spoon, press it against the sides to coat the dish. Place a few red currants into each coupe and cover with two ladyfingers that have been soaked in the syrup. Repeat the layering, finishing with the biscuits.
  3. Sprinkle with shaved ice cream and more red currants.
  4. Serve immediately.
