Gamberi (Shrimp) Marinara

Ingredients for 4 servings
- 800 g (1 lb. 12 oz.) Shrimp, size 16/20,
- about 4 per person
- 250 ml (1 cup) olive oil
- 2 cloves of garlic, minced
- Salt and freshly ground pepper
- 1 bunch of parsley, chopped
- Juice of 1 lemon
- 1 cucumber, cut into lengthwise strips
- 4 leaves of lollo rosso lettuce
- 4 leaves of curly leaf lettuce
- 4 leaves of endive
- 4 leaves of radicchio
- 4 tbsp. tomato, julienned
  1. Poach the shrimp in boiling water for a few moments, just long enough for them to change colour; immediately run under cold water to stop the cooking; peel and devein;
  2. in a bowl, vigorously whisk together the olive oil, lemon juice, parsley and garlic; season with salt and pepper; add the shrimp and combine well with the vinaigrette; marinate for 1 hour;


  1. place a ring in the center of each plate; place a strip of cucumber around the inner perimeter of the ring;
  2. coarsely tear up the greens and place inside the ring;
  3. remove the shrimp from the marinade; slice lengthwise and arrange in a wreath on top of the salad greens;
  4. pour the marinade over top; garnish with the julienned tomatoes and serve cold.
