Pattypan Squash and Mixed Grain Casserole Recipe

Tips
You could substitute dried apricots or figs, or toasted flaked almonds for the raisins.
Depending on your taste, you could also add some crème fraîche and/or onions to this dish.

Ingredients
For 4 servings
- 2 pattypan squash
- 2 apples
- 1 tsp. curry powder
- 1 packet of Tipiak gourmet grains or couscous
- olive oil
- about 80 g (3 oz.) raisins
- salt and pepper
Method
- Peel and dice the pattypan squash, then brown them in olive oil in a covered skillet.
- When they begin to color, sprinkle with curry, salt and pepper.
- Add the diced apple and simmer for approximately 10 minutes more, covered, until the apple is soft.
- Prepare the grains or couscous according to the package directions.
- Add the raisins to the skillet along with the grains and mix well.
