Greek-Style Lamb or Turkey Burger

Chef's Note

Designer burgers are the latest trend! Go Greek with this lamb burger with feta and tzatziki, served on pita bread and accompanied by a Greek salad. All it takes is a little imagination!

Ingredients
Burgers
- 450 g (1 lb.) ground lamb or turkey
- 125 g (4 oz.) feta cheese
- 1 tsp. oregano or thyme
- 125 ml (1/2 cup) kalamata olives, pitted and chopped (optional)
- 1 tsp. grated lemon zest
- 1 Tbsp. lemon juice
- 1 egg
- salt and pepper to taste

Toppings
- 8 Tbsp. tzatziki
- 8 thin cucumber slices
- 4 tomato slices
- lettuce

Buns
- 4 burger buns or 4 pita bread
- olive oil
- 1 clove of garlic (optional)
Method
  1. Preheat the barbecue to medium
  2. In a bowl, combine all the ingredients for the burgers. Divide into 4 equal portions and form into patties.
  3. Grill on the barbecue for 5-7 minutes on each side or until the internal temperature is 170° C (77° C).

Finishing

  1. Meanwhile, oil the burger buns and rub with a halved clove of garlic. Grill them for 1 minute before the burgers are finished. If using pita bread, halve them and warm them on a dry grill (without oil or garlic).
  2. Assemble each burger as follows: lettuce, tomato, burger, cucumber and tzatziki. Serve immediately.
