Barbecued Greek-marinated Chicken Recipe

Chef's Note
Greek kebabs are usually served with rice and a salad. A little side dish of tzatziki or greek yogurt with garlic will round out the plate.
In season, replace the salad with vegetables grilled on the barbecue: tomatoes, peppers, zucchini, etc.
Ingredients
For 4 servings
- 4 boneless skinless chicken breasts
Marinade
- 250 ml / 1 cupolive oil
- The juice of 1 or 2 lemons
- 2 garlic cloves, minced
- 1 Tbsp. dry oregano
- Salt & fresh black pepper
Method
- In a bowl, whisk together the olive oil and lemon juice to emulsify. Add the garlic and oregano.
- Cut the chicken breasts into cubes, then add to the marinade. Season with salt and pepper.
- Cover and refrigerate at least 4 hours.
- Preheat the barbecue or oven to high.
- Remove the chicken breast from the marinade and lightly pat dry. Season with salt and pepper.
- Divide the chicken cubes between 4 metal skewers.
- Grill for about 2 minutes on each side, keeping in mind there are four sides! Serve immediately.
