Barbecued Greek-marinated Chicken

Chef's Note

Greek kebabs are usually served with rice and a salad. A little side dish of tzatziki or greek yogurt with garlic will round out the plate.

In season, replace the salad with vegetables grilled on the barbecue: tomatoes, peppers, zucchini, etc.

Ingredients
For 4 servings

- 4 boneless skinless chicken breasts

Marinade
- 250 ml / 1 cupolive oil
- The juice of 1 or 2 lemons
- 2 garlic cloves, minced
- 1 Tbsp. dry oregano
- Salt & fresh black pepper
Method
  1. In a bowl, whisk together the olive oil and lemon juice to emulsify. Add the garlic and oregano.
  2. Cut the chicken breasts into cubes, then add to the marinade. Season with salt and pepper.
  3. Cover and refrigerate at least 4 hours.
  4. Preheat the barbecue or oven to high.
  5. Remove the chicken breast from the marinade and lightly pat dry. Season with salt and pepper.
  6. Divide the chicken cubes between 4 metal skewers.
  7. Grill for about 2 minutes on each side, keeping in mind there are four sides! Serve immediately.
