For 4 servings

- 4 Granny Smith apple apples - 500 g (18 oz.)
- Juice of 1 lemon
- 80 ml (3 oz.) Calvados
300 ml (1 1/4 cups) simple syrup at 30°
- 300 g (10 oz.) powdered sugar diluted in 300 ml (1 1/4 cups) water

Preparation - the day before

  1. Seed and core the apples, but do not peel. Chop finely. Toss with the lemon juice and place in the freezer overnight.

Preparation - The day

  1. Pour the hot syrup onto the frozen apples;
  2. immediately place them in a blender and blend; place into a sorbet maker to freeze;
  3. once the granita is sufficiently frozen, serve as is, drizzled with a little Calvados, mid-way through a meal, or at the end.
