Green peppercorn sauce is a perfect accompaniment to steak or chicken breasts. It has a rich refined flavor.
Ingredients
Ingredients for 4 servings
- 4 tbsp. cognac
- 100 ml (6 tbsp.) cream
- 100 ml (6 tbsp.) demi-glace (reduced brown stock)
- 2 tbsp. Green peppercorns
- 20 g (4 tsp.) butter
Method
- Cook the meat or chicken in the skillet as usual.
- Flambé with cognac. Place the lid on to extinguish the flames. Remove the meat and keep hot.
- Add the cream and the reduced brown stock (demi-glace) to the juices in the pan; reduce for 1 minute over high heat.
- Gradually whisk in the cold butter in small pieces.
- Add the drained green peppercorns to the sauce and heat through over a low flame.
