Chef's Note

Version 1 is used to enhance the flavor of osso bucco; version 2, white meats.

The proportions can be varied to individual taste, but the nutmeg should never predominate.

Ingredients
Version 1
- Finely minced garlic
- Grated lemon zest
- Chopped parsley

Version 2
- Finely minced garlic
- Grated lemon zest
- Grated orange zest
- Nutmeg
Method
  1. Mix all the ingredients together.
