Griessnockerlsuppe - Consommé with Dumplings Recipe

Ingredients
For 4 servings
- 1 liter (4 cups) beef bouillon
Dumplings
- 60 g (1/4 cup) butter
- 2 whole eggs
- 120 g (4 oz.) Semolina
- 2 tbsp. milk
- A pinch of grated nutmeg
- Salt
Method
- Cream the butter; add the other ingredients one after the other;
- Let rest 20 minutes; if the mixture is too stiff, add a little water; if too soft, add a little semolina;
- Form dumplings (quenelles) with a spoon and cook in simmering salted water.
- The dumplings are done once they rise to the surface.
- Add them to beef consommé just before serving.
