Guenilles - Auvergne Doughnuts Recipe

Chef's Note
"Guenilles" means rags, because the shape of these doughnuts from the Auvergne is reminiscent of strips of cloth.
Ingredients
For 6-8 servings
- 500 g (1 lb. 2 oz.) flour
- 60 g (2 oz.) fine sugar
- 100 g (3 1/2 oz.) butter
- 4 eggs
- icing sugar
- fine salt
Method
- Sift the flour into a bowl. Add the sugar and a pinch of salt, followed by the softened butter, cut into cubes, and then the eggs.
- Mix to a smooth dough.
- Roll the dough out to a 5 mm (1/4") thickness and cut into strips.
- Fry in hot oil.
- Drain on paper towels and sprinkle with icing sugar.
