Indian Yogurt Marinade Recipe
Chef's Note
White meats are delicate and therefore need a marinade that is not too strongly flavored. One hour is enough to tenderize and flavor a chicken breast.
Ingredients
Ingredients for 750 ml (3 cups)
- 750 ml (3 cups) yogurt
- 1 clove of garlic, minced
- 1 tsp. ground anise
- 6 crushed black peppercorns
- A pinch of cardamom
- A pinch of salt
Method
- In a bowl, combine all the ingredients.
- Use as a marinade and for brushing onto chicken while cooking.
