Kim Spice
Chef's Note

As autumn settles in, the days are getting cooler and rainier. To help make a smooth transition from summer to fall, we suggest this cocktail created by mixologist Étienne Bay. 

Ingredients
One serving

- 120 ml / 4 oz Kim Crawford unoaked Chardonnay
- 15 ml / 1 Tbsp. spice syrup
- 60 ml / 2 oz grapefruit juice
- 20 ml / 3/4 oz / 4 Tsp. lemon juice
- 60 ml / 2 oz sparkling water

Spice syrup
- 250 ml / 1 cup water
- 250 ml / 1 cup sugar
- 3 cinnamon stick
- 3 cloves
Method

Spice syrup

  1. Bring one cup water to a boil. 
  2. Crush the cinnamon sticks, nutmeg and cloves in the boiling water and let infuse for 5 minutes. 
  3. Add the sugar and simmer until it reaches a syrupy consistency. 
  4. Let cool. Strain and refrigerate.

Kim Spice

  1. Combine the grapefruit juice,  wine, spice syrup and lemon juice directly in a 12
    oz glass filled with ice.
  2. Add the sparkling water and garnish with a grapefruit twist.

Sourced from select vineyards in New Zealand, this wine is the perfect balance of the fresh citrus flavours of Marlborough and the richer stonefruit flavours of Hawke’s Bay.
