Korean Barbecue Beef - Bulgogi

Chef's Note
This is a classic of Korean cuisine, served with a bowl of white rice, sesame sauce and a bean sprout salad.
Ingredients for 4 servings
- 600 g (1 lb. 5 oz.) Beef striploin
- Celery leaves
- 2 tbsp. peanut or sunflower oil
- 1 tbsp. sesame oil
- 2 tbsp. light Chinese soy sauce
- 2 tbsp. dark Chinese soy sauce
- 1 shallot, finely chopped
- 2 cloves of garlic, chopped
- 1 tbsp. fresh grated ginger
- Freshly ground black pepper
  1. Cut the strip loin into 5 mm slices; then cut into 2.5 cm by 5 mm strips;
  2. combine the two soya sauces, the shallot, garlic, ginger, pepper and sesame oil;
  3. toss the beef strips with this mixture and let marinate for 15 minutes;
  4. add the celery leaves
  5. brush the barbecue grill with the oil; when it is very hot, grill the beef for one minute on each side;
  6. repeat the procedure depending on the size of the grill and the number of guests.
