What is a krumkake?

A krumkake is a thin, crisp cone-shaped cookie - actually more like a thin crêpe. Krumkake literally means "crumble cookie" and their delicate texture makes them especially delicious. This Norwegian specialty is made for festive occasions, particularly Christmas. Krumkake batter is made up largely of sugar, butter, flour, eggs and whipping cream.

Tool
To make authentic krumkakes, you need a krumkake iron that imprints a delicate, festive scroll design on each cookie as it bakes. If you don't have one, you could also use a crêpe pan.

Ingredients
- 4 Eggs
- 250 g (9 oz.) sugar
- 125 ml (1/2 cup) melted butter
- 250 ml (1 cup) cream
- 375 ml (1 1/2 cups) flour
- 1 tsp. cardamom
Method
  1. Beat the eggs until light.
  2. Add the sugar, butter, cream, flour and cardamom in order. Beat well after each addition. Add the cardamom before the flour is thoroughly mixed in. Allow to stand for 30 minutes to one hour before using.
  3. Drop a spoonful of the mixture in the centre of the iron; close and cook for approximately one minute. Turn the iron over and cook for another minute or so.
  4. When the krumkake is golden brown, remove from the iron and, while still warm, roll into the shape of a scroll or cone while it is still flexible.
  5. Repeat the process with the rest of the batter.
