Lamb Chops with Thyme and Mint Vinaigrette Recipe

Ingredients
For 4 servings
- 8 lamb chops
- 1 clove of garlic, halved
- 3 Tbsp. olive oil
- Salt and freshly ground pepper
- 2 Tbsp. fresh chopped thyme
Vegetables
- 500 g / 18 oz. new potatoes
- 500 g / 18 oz. leeks
- 250 g / 9 oz. carrot
- 2 Tbsp. chopped chives
- 5 Tsp. butter
Vinaigrette
- 1/2 bunch fresh mint, chopped
- 2 Tbsp. balsamic vinegar
- 3 Tbsp. olive oil
- Salt and freshly ground pepper
Method
- Make a vinaigrette by whisking together the mint, 3 tbsp. olive oil, the vinegar, salt and pepper.
- Scrape the potatoes. Boil for about 20 minutes in boiling salted water and peel.
- Wash the carrots, leaving on 4-5 cm stem. Wash the leeks thoroughly. Steam the vegetables for about 10 minutes until tender.
- Meanwhile, rub the lamb chops with the garlic. Brush with oil and sprinkle with thyme before grilling.
- Gently combine the carrots, leeks and potatoes with the chives and butter.
- Serve the lamb chops with the vegetables and the mint vinaigrette on the side.
