Lemon Marmalade Recipe

Method
- Wash the lemons and remove some of the zest to reduce the bitterness.
- Cut in half; remove the seeds and cut the lemons into thin strips.
- Place into a large container; cover with water and macerate for 48 hours, changing the water approximately every 5 hours.
- Drain; place in a pot; cover with water and boil until very tender. Drain again, then place into the pot with the sugar. Stir and cook until the consistency of a jam.
