Lemon Marmalade

Ingredients
Ingredients for 1 kg (2 1/4 lb. jam)
- 1 kg (2 1/4 lb.) unsprayed Lemons
- 1 kg (2 1/4 lb.) sugar
Method
  1. Wash the lemons and remove some of the zest to reduce the bitterness.
  2. Cut in half; remove the seeds and cut the lemons into thin strips.
  3. Place into a large container; cover with water and macerate for 48 hours, changing the water approximately every 5 hours.
  4. Drain; place in a pot; cover with water and boil until very tender. Drain again, then place into the pot with the sugar. Stir and cook until the consistency of a jam.
