Chef's Note

Add excitement to seafood, salad, steamed vegetables. Simply beautiful over fish.

For 1 litre (4 cups) olive oil

- 4 cups d'olive oil
- 2 lemons

- 1/2 Tso. coriander seeds
- 1 twig of thyme
- 1 twig of rosemary
- 1 laurel leaf
  1. Scrub lemon clean and dry thoroughly. Use a very sharp paring knife or peeler to remove the zest - just the bright yellow part of the peel, avoiding the bitter white pith immediately below - from the lemon.
  2. Put lemon zest, herbs, spices and olive oil in a glass bottle. Cover with olive oil.
  3. Close tight. Store in a cool, dark place for 3-4 weeks.
