Mint Mayonnaise for Cold Leg of Lamb Recipe

- 1 egg yolk
- 250-500 ml (1-2 cups) oil
- A few Mint leaves
- 2 tbsp. vinegar
- 1 tbsp. water
Method
  1. heat the vinegar and water in a small saucepan; add the mint and infuse for 5 minutes; strain;
  2. combine the egg yolk and mustard in a bowl; 
  3. slowly pour in the oil in a thin stream, whisking constantly to form a smooth creamy sauce; 
  4. add the mint infusion and season to taste.
