Mirabelle French toast Recipe

Ingredients
For 4 servings
- 800 g frozen Mirabelles de Lorraine (yellow plums)
- 4 slices of brioche
- 1 egg
- 250 ml / 1 cup cream
- 30 g brown sugar
- 80 g butter
- 1 Tbsp. plum eau de vie
- 1 cup vanilla ice cream
Method
- Combine the eggs with the cream and 20 g of the brown sugar. Dip the slices of brioche into the mixture. Cook in butter in a frying pan for 2 minutes on each side; set aside.
- Sauté the mirabelle halves in a little butter with the remaining brown sugar. Heat the eau-de-vie and flambé the mirabelles.
- Place the mirabelles on the French toast, accompanied by a scoop of vanilla ice cream.
