Mirabelles or Cherry Plums with Mustard Seed Recipe

Chef's Note
Serve the plums with white meat, poultry or foie gras.
They will keep for about 10 days.
Ingredients
For 4 servings
- 500 g (18 oz.) mirabelles (cherry plums)
- 2 Tbsp. mustard seed
- 400 ml (1 1/2 cups) water
- 100 g (3 1/2 oz.) sugar
Spices
- 1 vanilla bean
- 1 cinnamon stick
- 2 Tbsp. peppercorn blend
- 1 star anise
Method
- Run the plums under water, dry them and leave them whole and unpitted.
- Prepare the syrup by bringing the water and sugar to a boil.
- Add the mustard seeds and spices; continue cooking for a few minutes.
- Pour over the plums; cool to lukewarm before placing into a jar.
