Chef's Note
Chili-based sauces are an important part of Mexican culinary tradition. There is always a variety of sauces on the table - they are differentiated by the kind and strength of the chilis used in them.

- 15 tomatillos or Physalis
- 3 chipotle chilis (see Jalapeño or Chipotle)
- 1/4 onion
- 2 cloves of garlic
Method
Method
- Boil the chipotle chilis in water for 30 minutes;
- in another saucepan, cook the tomatillos in boiling water, removing them once they're cooked;
- liquefy all the ingredients in a blender.
