Mocha Spice Squares Recipe

Ingredients
- 200 g (7 oz.) softened butter
- 200 g (7 oz.) brown granulated sugar
- 2 eggs (separated)
- 125 g (4 oz.) ground hazelnuts
- 100 g (3 1/2 oz.) dark chocolate, crushed into small pieces (or chocolate chips)
- 250 g (9 oz.) flour
- 1 tsp. baking powder
- 2 tbsp. Rum
- 3 tsp. instant Nescafé granules
- 3 tbsp. hot water to dissolve the coffee
- 200 g (7 oz.) icing sugar
Spices
- 1 tsp. cinnamon
- 1 tsp. ground cardamom
- 1 tsp. ground cloves
- 1 tbsp. vanilla
Method
- With a whisk or electric mixer, beat together the butter and sugar, then incorporate the eggs, one at a time.
- Blend in the spices, vanilla, flour, baking powder and rum until the batter is smooth and thoroughly combined. At the very end mix in the hazelnuts and chocolate chips.
- Butter a sheet pan that is approximately 30 x 40 cm (12 x 16"). Pour the batter into the pan.
- Bake in a preheated 175°C / 350°F oven for approximately 20 minutes.
- The squares are done when a toothpick or knife point inserted into the center comes out clean. Remove from the oven.
Glaze
- Make the glaze by dissolving the instant coffee in the hot water. Pour over the icing sugar and mix well. Brush the glaze over the squares while still warm.
- Cut into 4-5 cm (2") squares once the glaze has dried and the squares have cooled.
