Chef's Note
Gravlax or Raw cured salmon needs no sauce because of its subtle flavor and fine texture. The mustard dill sauce on the buffet table is better suited to smoked salmon which has a more assertive taste.
- 3 tbsp. prepared mustard
- 2 tbsp. sugar
- 4 tbsp. wine vinegar
- 200 ml (3/4 cup) olive oil
- Fresh dill
  1. Shortly before serving the salmon, dissolve prepared mustard and sugar in wine vinegar
  2. Slowly whisk in olive oil, whisking constantly to create a creamy emulsion.
  3. Finally, stir in a generous amount of finely chopped fresh dill.
