Pear and Prosciutto Quesadillas Recipe

Ingredients
Ingredients for 8 servings
- 4 flour tortillas
- 250 ml (1 cup) grated Goat cheese cheddar
- 250 ml (1 cup) grated mozzarella
- 2-3 thin slices of Prosciutto, coarsely chopped
- 1 large Bartlett Pear, peeled, rubbed with lemon juice and thinly sliced
Method
- In a large skillet, heat two of the four tortillas and brown them on both sides.
- Place two tortillas on a baking sheet and sprinkle with the mozzarella and cheddar goat cheese.
- Add the prosciutto and the sliced pear, cover with the other two tortillas and press down firmly.
- Brown in a 180° C (350° F) oven for 3 minutes, or directly in the skillet, turning gently to lightly brown both sides.
- Serve the quesadillas on their own or with a green salad.
