Pear and Prosciutto Quesadillas

Ingredients
Ingredients for 8 servings
- 4 flour tortillas
- 250 ml (1 cup) grated Goat cheese cheddar
- 250 ml (1 cup) grated mozzarella
- 2-3 thin slices of Prosciutto, coarsely chopped
- 1 large Bartlett Pear, peeled, rubbed with lemon juice and thinly sliced
Method
  1. In a large skillet, heat two of the four tortillas and brown them on both sides.
  2. Place two tortillas on a baking sheet and sprinkle with the mozzarella and cheddar goat cheese.
  3. Add the prosciutto and the sliced pear, cover with the other two tortillas and press down firmly.
  4. Brown in a 180° C (350° F) oven for 3 minutes, or directly in the skillet, turning gently to lightly brown both sides.
  5. Serve the quesadillas on their own or with a green salad.
