Plantation Muffins with Tropical Butter

Chef's Note
These muffins can be served warm or cold with tropical butter. To make the tropical butter, combine 125 ml (1/2 cup) butter, at room temperature, with 125 ml (1/2 cup) marmalade and a pinch of cinnamon.
Ingredients for 12 muffins
- 2 tbsp. honey
- 2 tbsp. melted butter
- 335 ml (1 1/3 cup) wholewheat flour
- 165 ml (2/3 cup) all-purpose white flour
- 2 tsp. baking powder
- 250 ml (1 cup) milk
- 1 egg, lightly beaten
- A pinch of salt
  1. Preheat the oven to 200° C (400° F);
  2. in a bowl, combine the two flours, the baking powder and the salt;
  3. in another bowl, whisk together the milk, egg, honey and butter; blend this mixture into the dry ingredients using a spatula - do not overwork the batter, or the muffins will be heavy;
  4. grease the muffin tins; spoon the batter into the tins; bake for 15 - 18 minutes or until the muffins are cooked in the centre: check by using a skewer or knife blade.
