Plum Sauce Recipe

Ingredients
- 1 kg (2 1/4 lb.) pitted Plums
- 1 liter (4 cups) cranberry sauce
- 180 ml (6 oz.) tomato juice
- 375 ml (1 1/2 cups) sugar
- 1 tbsp. pickling spice
- 185 ml (3/4 cup) wine vinegar
- 1 1/2 tbsp. chicken base
- 125 ml (1/2 cup) cold water
- 2 tbsp. cornstarch
Method
- bring all the ingredients to a boil in a saucepan, except the cornstarch and water; cook over low heat for 30 minutes;
- combine the 2 tbsp. cornstarch and cold water; add to the pan to thicken the sauce;
- put the sauce through a strainer, pressing the plums with the back of a spoon.
Preserving
- pack the sauce into glass jars; place the lids on lightly and place in a 150 °C (300 °F) oven for 2 hours;
- tighten the lids;
- let cool completely; store in a cool dark place.
