Pumpkin Jam Recipe

Chef's Note
This jam is found in many countries. In Brazil, it is used as a filling for cakes.
- 2 kg (4 1/2 lb.) European Pumpkin
- 1 kg (2 1/4 lb.) sugar
- 1 cinnamon stick
- 2-3 cloves
  1. Cut the pumpkin into cubes; remove the seeds.
  2. Place in a pot and cook without adding any water, covered, until tender, about 75 minutes;
  3. add the sugar, cinnamon and cloves; continue cooking over low heat until mixture comes away from the sides of the pan;
  4. remove from the heat and let cool. The texture should be smooth and shiny.
