Rabbit Brochettes with Sesame and Diced Mango Recipe

Ingredients
For 4 servings
- 8 Rabbit tenderloins
- 200 g / 7 oz. Sesame seeds
- 1 Mango
- 10 pearl onions
- 3 tbsp. flour
- 1 egg
- 1 jar of mango chutney
- Salt and pepper
Method

Cut the rabbit tenderloins in half and thread them onto little wooden skewers. Season with salt and pepper, then dip successively into flour, beaten egg, and sesame seeds.
- Peel the mango, cut off the flesh from around the pit and cut into cubes. Peel and halve the pearl onions. Place cubes of mango and halved onions alternately onto skewers.
- Lay the brochettes on your oven's broiling rack that has been lined with parchment paper. Place in a preheated 200° C (400° F) oven and cook for 15 minutes, turning half way through or place the brochettes on the barbecue and cook for 5 minutes on each side. Serve with mango chutney.
