"Ricardito," the official cocktail of the 2009 Grand Fooding is a creation of Mauro Colagreco, the Michelin star-decorated chef of the Mirazur Restaurant in Menton. With this summer cocktail and its Latin accents and fresh, intense flavors, the chef pays fitting tribute to Ricard and its Mediterranean tastes.
Ingredients
For 4 drinks
- 8 green apples
- 80 g (3 oz.) celery
- 80 g (3 oz.) spinach
- ascorbic acid or the juice of 1 lemon
- 80 ml (3 oz.) sugar syrup, 30° density
- 10 mint leaves
- 160 ml (6 oz.) Ricard
- Ice cubes
Method
- Put the apples, celery and spinach through a vegetable juicer. Add the ascorbic acid to prevent oxidation.
- In a blender, combine the juice, mint, syrup, Ricard and ice cubes.
- Liquefy and strain. Serve very cold.
