Rillettes and Sautéed Apple Bites Recipe

Chef's Note
Rillettes are meat (pork in this case) that has been seasoned, slowly cooked in its fat, pounded and packed into ramekins. The cooking fat gives the rillettes a very creamy texture.

Method
- Wash the apples and cut into fairly thick wedges, leaving the skin on.
- Heat a non-stick skillet over high heat and heat the butter until foamy.
- Place the apple wedges in the pan and cook on each side until lightly browned but still firm.
- Place on a sheet of paper towel and season lightly with pepper.
- Place a dollop of rillettes on each apple wedge.
