Rosemary roasted chicken with potatoes Recipe

Ingredients
For 6 servings
- 2 tbsp olive oil
- 1 tsp salt
- 750 g / 1½ lb boneless, skinless chicken thighs (about 12)
- 750 g / 1½ lb small red potatoes cut into 2 cm / 1 in cubes
Seasonings (1)
- 2 tsp paprika
- 1½ tsp rosemary leaves, crushed
- 1 tsp minced garlic
- ½ tsp coarse grind black pepper
Method
- In large bowl, combine oil, spices and salt. Add chicken and potatoes; toss to coat well.
- Arrange chicken and potatoes in single layer on foil-lined baking sheet.
- Roast in preheated 220°C / 425°F oven 30 minutes or until chicken is no longer pink and potatoes are tender, turning potatoes occasionally.
