Rozata - Croatian Caramel Custard Recipe

This caramel custard is usually prepared in one large fluted mold and served to the whole table.
Ingredients
Ingredients for 4 servings
- 6 eggs
- 6 tbsp. sugar
- 1 liter (4 cups) milk
- Zest of 1 lemon
- 1 tsp. maraschino or rum
- 1 packet of vanilla sugar
- 14 sugar cubes
Method
- Beat the eggs with the 6 tbsp. sugar and milk, adding the lemon zest, maraschino or rum and some vanilla sugar.
- In a separate pot caramelize the sugar cubes and pour the caramel into an heat-proof pudding dish, swirling to coat the bottom and sides.
- Pour in the custard mixture. In a second pot, place enough water to reach halfway up the sides of the pudding dish and bring to a boil.
- Place the pudding dish into the water bath. Cook for 45 minutes in the water bath, and before the Rozata is finished cook it for 15 minutes in its dish in a 180°C (350°F) oven.
- After cooling, carefully turn the Rozata out onto a plate and serve. In summer, refrigerate before serving.
