Chef's Note
There are many variations, but the basic idea is always the same: a sausage wrapped in puff pastry.

Vary the flavors
Frankfurters are certainly the quickest choice for sausage rolls since they don't need to be cooked or boiled first. If you have time, cook some Toulouse-style sausages (coarse pork sausages seasoned with garlic). Remove the skin and proceed in the same way.

In a green suit
Steam some spinach; squeeze dry and place onto the pastry to create a little "nest" for the sausage.

Lighter and lower carb
Replace the puff pastry with phyllo pastry

Ingredients for 4 servings
- Frankfurters
- Puff pastry or Phyllo or Filo
  1. Cut strips of puff pastry. Roll a mini-sausage in each strip.
  2. Brush the tops with egg yolk.
  3. Place in a 210° C (425° F) oven for 15-20 minutes until the pastry is puffed and golden.
