Cheese scones Recipe

Ingredients
For 6 - 8 scones
- 1/2 stick/55g butter
- 2 cups /225g self raising flour
- 1 tsp baking powder
- 2-4 tbsp fine caster sugar
- 1/2 tsp salt
- 150 ml milk
- 1 cup /100g grated cheese
- 1/2 tsp dry mustard powder
Glaze
- 1 egg beaten with a little milk
Method
- Preheat the oven to 200° C (400° F). Grease a baking sheet.
- Rub together the flour, salt, baking powder, sugar and butter until crumbly. Add 1/2 cup /50g grated cheese and 1/2 tsp dry mustard powder. Add the milk.
- Turn the mixture on to a floured board and knead very lightly until you obtain workable dough.
- Roll the dough out to a thickness of 2 cm (3/4"). Using a 7.5 cm (3") cutter, cut the dough into discs.
- Place on the baking tray and brush with the beaten egg and milk mixture.
- Sprinkle the scones with 1/2 cup/50g more grated cheese.
- Bake for 15 minutes or until golden and well risen.
- Remove from the oven and carefully transfer to a rack to cool. Serve hot or cold, with butter.
