Chicken or Turkey Spring Rolls or Sandwich Wraps Recipe

Chef's Note
Spring rolls are great for lunch boxes! Just combine some nice thinly-sliced vegetables (carrot, bell pepper, cucumber) with some strips of cooked chicken. Add a fruit or peanut-based dip… and you're set!
Ingredients
For 8 rolls
- 8 round rice paper wrappers
- 80 g (3 oz.) rice vermicelli
- 10 ml (2 tsp.) grated fresh ginger
- 5 ml (1 tsp.) chopped garlic
- 15 ml (1 tbsp.) soy sauce
- 25 ml (5 tsp.) lime juice
- 2 green onions, chopped
- 1 red pepper, grilled and cut into thin julienne strips
- 1 English cucumber, peeled and cut into thin julienne strips
- 350 g (12 oz.) cooked chicken breast, cut into strips
- 16 Thai basil leaves
Method
- Soak the rice vermicelli in cold water for about an hour; drain.
- Combine the ginger, garlic, soy sauce and lime juice; toss with the vermicelli.
- Dip a rice paper wrapper into warm water until softened.
- Arrange some of the vermicelli, chicken breast and vegetables in a long band across each wrapper. Roll up tightly; wrap in plastic wrap and place in the lunch box.
