Strawberry vinaigrette Recipe

For a vinaigrette that will delight your taste buds, try this recipe. It’s wonderful on salads or as a marinade, says Mireille Dugré. Here we’re giving a local version flavored with mint and a touch of maple syrup. How about trying it on some grilled scallops?
A recipe from Jardins Dugré - a friendly market in Trois-Rivières where you can buy or pick your own strawberries. A good seasonal stop for fresh products.
Ingredients
For 325 ml
- 150 ml olive oil
- 50 ml balsamic vinegar
- 125 ml fresh strawberries
- freshly grinded black pepper
- Optional
- Salt to taste
- 2-3 mint or basilic leaves
Method
1. In a food processor or blender, combine all ingredients. Purée until smooth.
2. Whisk a few seconds to froth the vinaigrette if you plan to use it immediately.
