Surpirse Beggar's Purses (camembert, pine nuts, Granny Smith)

For 4 servings

- 8 sheets of phyllo or brick pastry
- 4 chives
- 1 raw milk Camembert, quartered
- 4 tsp. pine nuts
- 1 pear or 1 Granny Smith apple
- 50 g (3 tbsp.) butter
  1. In a saucepan, melt the butter; 
  2. brush each sheet of brick or phyllo with hot melted butter to soften it;
  3. peel and core the apple or the pear; chop very finely;
  4. in the center of each pastry sheet, place 1 piece of camembert, 1 tsp. pine nuts and 1 tbsp. chopped apple or pear;
  5. close up the beggar’s purses by lifting up the edges and tying each package into a little sack with a chive spear;
  6. place onto a greased baking sheet; bake in a preheated 200°C / 400°F) oven for 10-15 minutes until lightly browned;
  7. remove from the oven and serve immediately on a bed of mixed greens.
