Sweet Potato Chocolate Chip Mini Muffins Recipe

Ingredients
For 96 mini muffins
- 4 eggs
- 500 ml / 2 cups sugar
- 450 g / 500 ml / 2 cups mashed sweet potato
- 190 ml / 3/4 cup oil
- 250 g / 500 ml / 2 cups al purpose flour
- 125 g / 250 ml / 1 cup whole wheat flour
- 2 Tsp. baking soda
- 2 Tsp. baking powder
- 1 Tsp. ground cinnamon
- 1 Tsp. salt
- 1 package chocolate chips - about 200 g
Method
- Preheat oven to 180°C / 350°F.
- Beat eggs, sugar, mashed sweet potatoes and oil in a large mixing bowl until smooth.
- In a separate bowl, whisk dry ingredients together.
- Add dry ingredients (3) to liquid ingredients (2) and stir until just combined.
- Fold in chocolate chips.
- Fill greased or paper lined muffin cups 3/4 full.
- Bake 16-20 minutes.
