Tandoori Chicken Fingers Recipe

This is a very simplified version of tandoori chicken that's perfect for the barbecue.
Ingredients
For 4 servings
- 4 Chicken breasts, cut into strips
- 4 tbsp. oil
- 2 tbsp. lime or lemon juice
Tandoori spice blend
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. ground ginger
- 1/2 tsp. ground coriander
- 1/2 tsp. salt
Accompaniments
- 3 onions, sliced
- 2 tomatoes, peeled and diced
- 1/2 tsp. Garam Masala
- Lime or lemon wedges
- Cooking oil
Method
- Cut the chicken breasts into strips, removing all the skin (important); make slashes in the meat about 1-2 cm (3/8 - 3/4") apart;
- mix the tandoori powder; rub the chicken with this spice mix;
- place the chicken strips onto skewers; brush with oil; cook for about 15 minutes on a barbecue or grill; turn halfway through and brush again with oil;
- meanwhile, slice the onions; season with salt and garam masala and fry in oil;
- divide the onions among the plates; place the chicken fingers on top; garnish with diced tomato and lime or lemon wedges.
