Welsh Cheese and Herb Scones Recipe

Ingredients
Ingredients for 12 scones
- 450 g (1 lb.) self-raising flour
- or 450 g (1 lb.) all-purpose flour + 2 tbsp. baking powder
- 1 tsp. salt
- 100 g (6 tbsp.) softened butter or margarine
- 1 tsp. dried herbs
- 225 g (8 oz.) grated Cheddar or other strong cheese
- 120 ml (1/2 cup) milk
- 120 ml (1/2 cup) water
Method
- Preheat the oven to 220° C (425° F). Grease a baking sheet.
- Rub together the flour, salt and butter until crumbly; mix in the herbs and 175 g (6 oz.) grated cheese. Add the milk and water and mix to a workable dough.
- Roll the dough out on a floured surface to a thickness of 2.5 cm (1"). Using a 6 cm (2 1/2 ") cutter, cut the dough into discs. Transfer to the baking sheet and sprinkle with the remaining cheese (50 g / 2 oz.)
- Bake for 10 minutes or until golden.
- Remove from the oven and carefully transfer to a rack to cool. Serve hot or cold, with butter.
