Rising time: 45 minutes (15 + 30)
Baking time: 15-25 minutes, depending on the shape of the loaf

Difficulty: Easy
For 2 country loaves, 5 baguettes or 40 rolls

- 1 kg (2 1/4 lb.) flour
- 600 ml (2 1/2 cups) water at 60-70° C (140-150° F)
- 40 g (1 1/2 oz.) yeast
- 20 g (4 tsp.) salt
  1. Dissolve the yeast in half the water (300 ml - 1 1/4 cup).
  2. Add the flour and the remaing water. Let rest for 15 minutes in a warm draft-free place.
  3. Knead the dough for 1-2 minutes. Add the salt. Continue kneading for 10 minutes until the dough is slightly sticky but comes away from your fingers.
  4. Form the loaves as desired: this quantity of dough will make 2 country loaves, 5 baguettes or 40 rolls.
  5. Let the bread rise for 30 minutes.
  6. Meanwhile, preheat the oven to 220-230° C (450° F). Place a container of water in the oven and spray the sides of the oven with water before placing the bread in. The baking time will depend on the kind of loaf: 20-35 minutes for country bread, 20-25 minutes for baguettes and 15-20 minutes for individual rolls.
  7. Remove the bread and cool on a rack.
