Ingredients
Ingredients for 4 servings
- 1 minced shallot
- 125 ml (1/2 cup) white wine
- 125 ml (1/2 cup) gelatinous fish stock
- 125 ml (1/2 cup) clam juice
- Fresh thyme
- 1 bay leaf
- 65 ml (1/4 cup) heavy cream
- 6 tbsp. unsalted butter
- 1 tbsp. whole-grain Mustard
- 1 tbsp. crème fraîche
- 1 tsp. Horseradish
- 1 tsp. chopped dill
- 1 tsp. finely chopped chives
Method
  1. Place the first 6 ingredients into a heavy saucepan; reduce over medium heat until one-third of the liquid remains;
  2. add the cream and heat until foamy; whisk in the butter; 
  3. strain, pressing well to extract all the flavors; keep warm over a water bath; 
  4. in a small bowl, combine the whole-grain mustard, horseradish and cream; 
  5. whisk into the sauce; 
  6. place again over the water bath; add the herbs and keep hot until serving time.
