Flavors of Normandy

What is the "Trou normand" - the "Norman hole"? It means downing a little shot of Calvados right in the middle of a meal. Having been tested carefully for over 400 years, it can be stated that it works wonders. It restores the appetite for enjoying all the specialties of Normandy - shellfish, meat and farm-raised poultry, tripe, salt marsh lamb, andouille sausage, cheeses and apple pie, among other delights!
