Andalucian mayonnaise Recipe
Chef's Note
Serve with grilled meats or fish, cold poached fish and fish terrines.
Ingredients
For 10 servings
- 250 ml / 1 cup homemade mayonnaise
- 2 pimientos or spanish bell pepper
- 15 ml / 1 Tbsp. crushed tomato
Method
- Prepare the homemade mayonnaise.
- Chop the pimientos into brunoise (very small dice).
- Add the crushed tomatoes or fresh tomato purée and pimientos to the mayonnaise and correct the seasoning as necessary.
